Chili Lime Tempeh Tacos
These vegan tacos are packed with flavor from the chili lime marinated tempeh and fresh toppings.
Ingredients - Serves 4
- Lime wedges - 8
- Cilantro - 1/4 cup, chopped
- Red onion - 1/4, thinly sliced
- Avocado - 1, sliced
- Taco shells - 8
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Chili powder - 1 tablespoon
- Lime juice - 1/4 cup
- Tempeh - 8 ounces
Let's Get Started
- Cut the tempeh into thin strips and place in a shallow dish.
- In a small bowl, combine the lime juice, chili powder, and minced garlic. Pour over the tempeh and let marinate for at least 15 minutes.
- Heat the olive oil in a skillet over medium heat. Add the marinated tempeh and cook until browned and crispy, about 5 minutes per side.
- Warm the taco shells in the oven or on the stovetop.
- Fill each taco shell with a few pieces of the cooked tempeh, a few slices of avocado, some red onion, and a sprinkle of cilantro.
- Serve with a lime wedge on the side for squeezing over the top of the tacos.
