Let's Get Started

  1. Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
  2. Add the chicken and cook until browned and cooked through. Remove from the pan and set aside.
  3. In the same pan, add the remaining oil and the garlic. Cook until fragrant.
  4. Crack the eggs into the pan and scramble until just set.
  5. Add the cooked rice to the pan and stir to combine with the eggs and garlic.
  6. Add the soy sauce, fish sauce, and sugar. Stir to combine.
  7. Return the chicken to the pan and add the green onions. Stir to combine and cook for another 2-3 minutes.
  8. Serve the fried rice with chopped cilantro and lime wedges on the side.
