Khao Pad
Khao Pad, or Thai Fried Rice, is a comfort food that is simple, flavorful, and easy to make. This recipe uses chicken, but feel free to substitute with your favorite protein.
Ingredients - Serves 4
- Lime wedges - For serving
- Cilantro - 1/4 cup, chopped
- Green onions - 3, chopped
- Sugar - 1 teaspoon
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Eggs - 2
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Chicken breast - 1, cut into bite-sized pieces
- Cooked jasmine rice - 3 cups
Let's Get Started
- Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
- Add the chicken and cook until browned and cooked through. Remove from the pan and set aside.
- In the same pan, add the remaining oil and the garlic. Cook until fragrant.
- Crack the eggs into the pan and scramble until just set.
- Add the cooked rice to the pan and stir to combine with the eggs and garlic.
- Add the soy sauce, fish sauce, and sugar. Stir to combine.
- Return the chicken to the pan and add the green onions. Stir to combine and cook for another 2-3 minutes.
- Serve the fried rice with chopped cilantro and lime wedges on the side.
