Let's Get Started

  1. Preheat the broiler to high.
  2. In a small saucepan, combine the soy sauce, mirin, sugar, and sake. Bring to a boil, then reduce the heat and simmer for 5 minutes, or until the sauce has thickened.
  3. Rinse the unagi fillets under cold water and pat dry with paper towels.
  4. Place the unagi fillets on a broiler pan and brush with the sauce.
  5. Broil for 5-7 minutes, or until the unagi is browned and crispy on top.
  6. Divide the rice among four bowls and top with the unagi fillets.
  7. Drizzle with the remaining sauce and sprinkle with scallions and nori strips.
