Ingredients - Serves 4
- Scallions - 1 tablespoon, chopped
- Shiitake mushrooms - 1/4 cup, sliced
- Chicken breast - 1/2 cup, diced
- Salt - 1/2 teaspoon
- Mirin - 1 tablespoon
- Soy sauce - 1 tablespoon
- Dashi stock - 2 cups
- Eggs - 3
Let's Get Started
- In a bowl, beat the eggs lightly, making sure not to create bubbles.
- In a separate bowl, combine the dashi stock, soy sauce, mirin, and salt.
- Slowly add the dashi mixture to the eggs, stirring gently.
- Strain the egg mixture through a fine sieve to ensure a smooth texture.
- Divide the chicken, mushrooms, and scallions among four small cups or ramekins.
- Pour the egg mixture over the ingredients in the cups.
- Cover each cup with aluminum foil.
- Steam the cups over high heat for 10 minutes, then reduce the heat to low and steam for another 20 minutes.
- Check the custard for doneness by inserting a skewer. If clear liquid comes out, it's done.
- Serve the chawanmushi hot, garnished with additional scallions if desired.
