  1. In a bowl, beat the eggs lightly, making sure not to create bubbles.
  2. In a separate bowl, combine the dashi stock, soy sauce, mirin, and salt.
  3. Slowly add the dashi mixture to the eggs, stirring gently.
  4. Strain the egg mixture through a fine sieve to ensure a smooth texture.
  5. Divide the chicken, mushrooms, and scallions among four small cups or ramekins.
  6. Pour the egg mixture over the ingredients in the cups.
  7. Cover each cup with aluminum foil.
  8. Steam the cups over high heat for 10 minutes, then reduce the heat to low and steam for another 20 minutes.
  9. Check the custard for doneness by inserting a skewer. If clear liquid comes out, it's done.
  10. Serve the chawanmushi hot, garnished with additional scallions if desired.
