Ingredients - Serves 4
- Noodles - 400 grams
- Sugar - 1 teaspoon
- Dark soy sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable oil - 1/2 cup
- Scallions - 2 bunches
Let's Get Started
- Wash the scallions and pat them dry. Cut into sections.
- Heat the oil in a pan over medium heat. Add the scallions and stir-fry until they turn brown and crispy.
- Remove the scallions from the oil and set aside. Keep the oil.
- In a separate bowl, mix the soy sauce, dark soy sauce, and sugar.
- Cook the noodles according to the package instructions. Drain and set aside.
- Heat the scallion oil in the pan. Add the soy sauce mixture and stir well.
- Add the cooked noodles to the pan and toss until they are evenly coated with the sauce.
- Serve the noodles hot, topped with the crispy scallions.
