  3. Remove the scallions from the oil and set aside. Keep the oil.
  4. In a separate bowl, mix the soy sauce, dark soy sauce, and sugar.
  5. Cook the noodles according to the package instructions. Drain and set aside.
  6. Heat the scallion oil in the pan. Add the soy sauce mixture and stir well.
  7. Add the cooked noodles to the pan and toss until they are evenly coated with the sauce.
  8. Serve the noodles hot, topped with the crispy scallions.
