  5. Divide the chicken, mushrooms, and scallions among four small cups or ramekins.
  6. Pour the egg mixture into each cup, filling about 3/4 of the way.
  7. Cover each cup with aluminum foil.
  8. Steam the cups in a steamer for about 15-20 minutes, or until the custard is set.
  9. Serve the chawanmushi hot, as an appetizer.
