Ukoy
Ukoy is a popular Filipino appetizer made with shrimp and vegetables, deep-fried to crispy perfection.
Ingredients - Serves 4
- Cooking oil - For frying
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Water - 1/4 cup
- Egg - 1, beaten
- All-purpose flour - 1/4 cup
- Cornstarch - 1/4 cup
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Sweet potato - 1 medium, grated
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a bowl, combine the grated sweet potato, chopped onion, minced garlic, cornstarch, all-purpose flour, beaten egg, water, salt, and pepper. Mix well to form a batter.
- Add the peeled and deveined shrimp to the batter and toss to coat evenly.
- Heat cooking oil in a deep pan or pot over medium heat.
- Scoop a spoonful of the shrimp and vegetable batter and carefully drop it into the hot oil. Repeat until the pan is filled with fritters, but do not overcrowd.
- Fry the ukoy for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove the cooked fritters from the oil and drain on a paper towel-lined plate to remove excess oil.
