Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Green onions - 2, chopped
- Bell pepper - 1, sliced
- Onion - 1, sliced
- Garlic - 3 cloves, minced
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Curry powder - 2 tablespoons
- Eggs - 2
- Chicken breast - 500 grams, sliced
Let's Get Started
- Heat the oil in a wok or large frying pan over medium heat.
- Add the garlic and onion and stir-fry until fragrant.
- Add the chicken and stir-fry until it's no longer pink.
- Add the curry powder, oyster sauce, soy sauce, and sugar. Stir well to combine.
- Push the chicken to one side of the wok and crack the eggs into the other side. Scramble the eggs and mix with the chicken.
- Add the bell pepper and green onions and stir-fry for another 2-3 minutes.
- Serve the Gai Pad Pongali with steamed rice.
