Let's Get Started

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for 1 minute.
  3. Add the vegetable broth, soy sauce, and mirin to the pot. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. Meanwhile, in a separate pan, sauté the mushrooms and baby bok choy until tender.
  5. Divide the cooked udon noodles between two bowls. Pour the hot broth over the noodles.
  6. Top each bowl with sautéed mushrooms, baby bok choy, sliced green onions, and a soft-boiled egg.
  7. Sprinkle with toasted sesame seeds.
  8. Serve hot and enjoy!
