Udon Ramen
This udon ramen recipe features thick and chewy udon noodles in a flavorful broth, topped with various toppings.
Ingredients - Serves 2
- Toasted sesame seeds - 1 tablespoon
- Soft-boiled eggs - 2
- Baby bok choy - 2, halved
- Mushrooms - 4 ounces, sliced
- Green onions - 2, sliced
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for 1 minute.
- Add the vegetable broth, soy sauce, and mirin to the pot. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Meanwhile, in a separate pan, sauté the mushrooms and baby bok choy until tender.
