  1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, cook the pork belly over medium heat until crispy. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced onion and minced garlic. Cook until the onion is translucent.
  4. Add the chopped kimchi to the skillet and cook for 2-3 minutes, until heated through.
  5. Add the cooked udon noodles to the skillet and toss to combine with the kimchi and onion mixture.
  6. In a small bowl, whisk together the soy sauce, sesame oil, and sugar. Pour the sauce over the noodles and stir to coat.
  7. Add the crispy pork belly back to the skillet and cook for an additional 2-3 minutes, until everything is well combined and heated through.
  8. Serve the kimchi udon hot, garnished with chopped green onions and toasted sesame seeds.
