Udon Noodle Soup
This comforting udon noodle soup is made with a flavorful broth, tender udon noodles, and a variety of toppings.
Ingredients - Serves 2
- Toasted sesame seeds - 1 tablespoon
- Soft-boiled eggs - 2
- Green onions - 2, sliced
- Bok choy - 2 baby bok choy, chopped
- Mushrooms - 4 ounces, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to package instructions. Drain and set aside.
