Twin Peaks Teriyaki Bowls
A delicious and healthy bowl filled with teriyaki glazed chicken, fresh vegetables, and served over a bed of fluffy rice.
Ingredients - Serves 2
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Cooked rice - 2 cups
- Mixed vegetables (bell peppers, broccoli, carrots) - 2 cups
- Vegetable oil - 1 tablespoon
- Teriyaki sauce - 1/2 cup
- Boneless skinless chicken breasts - 2
Let's Get Started
- Marinate the chicken breasts in the teriyaki sauce for at least 30 minutes.
- Heat the vegetable oil in a pan over medium heat.
- Add the chicken to the pan and cook until no longer pink in the middle, about 7 minutes per side.
- Remove the chicken from the pan and set aside.
- In the same pan, add the mixed vegetables and cook until tender, about 5 minutes.
- Slice the cooked chicken and add it back to the pan with the vegetables.
- Serve the chicken and vegetables over the cooked rice.
- Garnish with chopped green onions and sesame seeds.
