Tuna Nicoise Salad

Ingredients - Serves 2
- Salt and pepper - To taste
- Olive oil - 4 tablespoons
- Lemon juice - 2 tablespoons
- Dijon mustard - 2 tablespoons
- Red onion - 1/4 cup, thinly sliced
- Olives - 1/2 cup, pitted
- Hard-boiled eggs - 2, sliced
- Cherry tomatoes - 1 cup, halved
- Green beans - 1 cup, trimmed
- Boiled potatoes - 8 small, halved
- Mixed greens - 4 cups
- Tuna steaks - 2, 6 oz each
Let's Get Started
- Season the tuna steaks with salt and pepper.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
- Sear the tuna steaks for 2-3 minutes per side, or until desired doneness. Set aside to cool.
- In a large bowl, combine the mixed greens, boiled potatoes, green beans, cherry tomatoes, hard-boiled eggs, olives, and red onion.
- In a small bowl, whisk together the Dijon mustard, lemon juice, remaining olive oil, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss to coat.
- Slice the seared tuna steaks and arrange them on top of the salad.
