Tulumba
Tulumba is a popular dessert found in the cuisines of the former Ottoman Empire. It is a fried batter soaked in syrup, similar to churros.
Ingredients - Serves 10
- Lemon juice - 1 tablespoon
- Sugar - 2 cups
- Vegetable oil - For frying
- Eggs - 4
- All-purpose flour - 1 cup
- Salt - 1/4 teaspoon
- Butter - 2 tablespoons
- Water - 1 cup
Let's Get Started
- In a saucepan, combine water, butter, and salt. Bring to a boil.
- Add the flour all at once and stir vigorously until the mixture forms a ball.
- Remove from heat and let cool for 5 minutes.
- Add the eggs, one at a time, beating well after each addition.
- Transfer the dough to a pastry bag fitted with a large star tip.
- Heat the oil in a deep fryer or large saucepan to 375°F.
- Pipe 2-inch lengths of the dough into the hot oil. Fry until golden brown.
- In a separate saucepan, combine sugar, 1 cup water, and lemon juice. Bring to a boil and cook until the sugar is dissolved to make the syrup.
- Drain the fried dough on paper towels, then soak in the syrup for 15 minutes before serving.
