Pollo al Burro
Pollo al Burro, or Butter Chicken, is a delicious Italian dish made with chicken breasts cooked in a buttery lemon sauce.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Chicken broth - 1 cup
- Garlic - 2 cloves, minced
- Butter - 4 tablespoons
- All-purpose flour - 1/2 cup
- Salt and pepper - To taste
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper, then dredge them in the flour.
- Melt 2 tablespoons of the butter in a large skillet over medium heat.
- Add the chicken to the skillet and cook until golden brown on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Cook until the garlic is fragrant, about 1 minute.
- Add the chicken broth and lemon juice to the skillet, scraping the bottom of the skillet to loosen any browned bits.
- Return the chicken to the skillet and simmer until the chicken is cooked through, about 10 minutes.
- Sprinkle the chicken with the chopped parsley before serving.
