  1. In a large bowl, combine the ground chicken, green onions, garlic, ginger, soy sauce, sake, mirin, breadcrumbs, egg, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Divide the mixture into 8 equal portions and shape each portion into a ball.
  3. Thread each meatball onto a skewer.
  4. Preheat the grill or grill pan over medium heat.
  5. Grill the tsukune for about 6-8 minutes, turning occasionally, until cooked through and nicely browned.
  6. While the tsukune is grilling, prepare the glaze by combining soy sauce, mirin, and sugar in a small saucepan. Cook over medium heat until the sugar is dissolved and the sauce thickens slightly.
  7. Brush the glaze onto the cooked tsukune, turning them to coat evenly.
  8. Grill for an additional 1-2 minutes, until the glaze caramelizes and forms a shiny coating.
  9. Serve the tsukune hot, garnished with sesame seeds and additional green onions if desired.
