Trinxat
Trinxat is a traditional dish from Catalonia, Spain. It's a simple, hearty dish made with potatoes, cabbage, and bacon.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Bacon - 4 slices
- Cabbage - 1 small head
- Potatoes - 4 medium
Let's Get Started
- Peel and cut the potatoes into chunks. Boil them until they are soft.
- While the potatoes are boiling, chop the cabbage and cook it in a separate pot until it is soft and tender.
- In a large pan, cook the bacon until it is crispy. Remove the bacon and set it aside, but keep the grease in the pan.
- Add the minced garlic to the pan and cook it in the bacon grease until it is fragrant.
- Drain the potatoes and cabbage and add them to the pan with the garlic. Mash everything together until it is well combined.
- Crumble the cooked bacon and mix it into the potato and cabbage mixture. Season with salt and pepper to taste.
- Serve the trinxat hot, with a side of bread if desired.
