Torta Ahogada
Torta Ahogada is a popular dish from Guadalajara, Mexico. It's a sandwich 'drowned' in a spicy tomato and chili sauce.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Radishes - 4, sliced
- Cabbage - 1/2, shredded
- White onion - 1, large
- Arbol chilies - 5
- Tomatoes - 4, large
- Bread rolls - 4
- Bay leaves - 2
- Garlic - 2 cloves, minced
- Pork loin - 1 pound
Let's Get Started
- Place the pork loin in a pot with the garlic and bay leaves. Cover with water and simmer for about 2 hours, or until the pork is tender.
- Remove the pork from the pot and shred it. Set aside.
- For the sauce, blend the tomatoes, chilies, and half of the onion until smooth. Pour the sauce into a pot and simmer for about 20 minutes.
- Slice the bread rolls in half and fill them with the shredded pork. Place the sandwiches in a deep dish.
- Pour the sauce over the sandwiches, making sure they are completely covered.
- Top with the remaining onion, shredded cabbage, radish slices, and a squeeze of lime.
