Pescado a La Talla
Pescado a la Talla is a traditional Mexican dish that consists of grilled fish marinated in a spicy adobo sauce.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Olive oil - 2 tablespoons
- Pepper - To taste
- Salt - To taste
- Cumin - 1/2 teaspoon
- Oregano - 1 teaspoon
- White onion - 1/2, chopped
- Garlic - 2 cloves
- Guajillo chilies - 4, seeds removed
- Red snapper - 1 whole, cleaned and gutted
Let's Get Started
- Soak the guajillo chilies in hot water for 15 minutes, then drain.
- In a blender, combine the soaked chilies, garlic, onion, oregano, cumin, salt, pepper, and olive oil. Blend until smooth.
- Score the fish on both sides and rub the marinade all over. Let it marinate for at least 2 hours.
- Preheat a grill to medium-high heat.
- Grill the fish for about 10 minutes on each side, or until it is cooked through and the skin is slightly charred.
- Serve the fish with lime wedges on the side.
