Carnes en Su Jugo

Ingredients - Serves 4
- Salt and pepper - To taste
- Lime - 1, cut into wedges
- Onion - 1, chopped
- Radishes - 4, sliced
- Cilantro - 1/2 cup, chopped
- Tomatillos - 4, husked and chopped
- Jalapeno - 1, chopped
- Garlic - 2 cloves, minced
- Pinto beans - 2 cups, cooked
- Bacon - 1/2 lb, chopped
- Beef sirloin - 1 lb, thinly sliced
Let's Get Started
- In a large pot, cook the bacon over medium heat until crispy.
- Add the beef to the pot and cook until browned.
- Add the garlic and jalapeno to the pot and cook for another minute.
- In a blender, combine the tomatillos, half of the cilantro, and a cup of water. Blend until smooth.
- Add the tomatillo mixture to the pot and bring to a boil. Reduce the heat and simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve the meat and juice over the cooked beans. Garnish with the radishes, onion, remaining cilantro, and lime wedges.
