Tofu Banh Mi
This Vietnamese-inspired sandwich is packed with marinated tofu, pickled vegetables, and fresh herbs.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Mayonnaise - 1/4 cup
- Baguette - 1, cut into 4 pieces and halved lengthwise
- Sugar - 1 tablespoon
- White vinegar - 1/4 cup
- Cucumber - 1, julienned
- Carrot - 1, julienned
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 1/4 cup
- Extra firm tofu - 1 block, pressed and sliced
Let's Get Started
- Marinate the tofu in the soy sauce, sesame oil, and garlic for at least 30 minutes.
- While the tofu is marinating, pickle the carrot and cucumber by combining them with the vinegar and sugar in a bowl. Let sit for at least 20 minutes.
- Heat a pan over medium heat and add the tofu, cooking until browned on each side, about 5 minutes total.
- Spread the mayonnaise on the baguette halves.
- Add the tofu, pickled vegetables, and cilantro to the baguette to assemble the sandwiches.
