Kuay Tiew Reua, also known as Boat Noodles, is a flavorful Thai noodle soup dish. It's traditionally sold by vendors from boats on the canals in Thailand.
Ingredients - Serves 4
- Chili flakes - To taste
- Fried garlic - 1 tablespoon
- Cilantro - 1/4 cup, chopped
- Green onions - 1/4 cup, chopped
- Bean sprouts - 1 cup
- Fish sauce - 2 tablespoons
- Sugar - 1 tablespoon
- Beef or pork stock - 1 liter
- Star anise - 2
- Cinnamon stick - 1
- Garlic - 2 cloves, minced
- Dark soy sauce - 2 tablespoons
- Rice noodles - 200 grams
- Beef or pork - 500 grams, sliced
Let's Get Started
- Marinate the beef or pork in the dark soy sauce for 15 minutes.
- In a large pot, sauté the garlic until fragrant.
- Add the marinated beef or pork to the pot and cook until browned.
- Add the cinnamon stick, star anise, stock, sugar, and fish sauce to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- In a separate pot, cook the rice noodles according to the package instructions.
- To serve, place a portion of noodles in a bowl. Top with the soup, bean sprouts, green onions, cilantro, fried garlic, and chili flakes.
