Gang Jued
Gang Jued is a mild, clear soup from Thailand. It's light, healthy, and packed with vegetables and tofu.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Green onions - 2, chopped
- Glass noodles - 1/2 cup
- Mushrooms - 1/2 cup, sliced
- Carrots - 1/2 cup, sliced
- Cabbage - 1 cup, chopped
- Tofu - 1 cup, cubed
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Water - 4 cups
Let's Get Started
- In a large pot, bring the water to a boil.
- Add the soy sauce and garlic and stir to combine.
- Add the tofu, cabbage, carrots, and mushrooms. Reduce the heat and simmer for 15 minutes.
- In the meantime, soak the glass noodles in warm water for 10 minutes, then drain and add to the pot.
- Cook for another 5 minutes, or until the noodles are soft.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with the green onions and cilantro.
