A delightful twist on the classic Italian dessert, this Genovese-style Tiramisù features a creamy mascarpone filling layered with coffee-soaked sponge fingers, all dusted with a generous helping of cocoa powder.

- Cocoa powder - For dusting
- Espresso coffee - 200ml
- Savoiardi biscuits (ladyfingers) - 200g
- Mascarpone cheese - 500g
- Sugar - 100g
- Egg yolks - 4

- In a large bowl, beat the egg yolks and sugar until creamy and light in color.
- Add the mascarpone cheese to the egg yolk mixture and beat until well combined.
- In a separate bowl, pour the espresso coffee. Dip each savoiardi biscuit into the coffee and arrange in a single layer at the bottom of a serving dish.
- Spread half of the mascarpone cream over the biscuits.
- Repeat with another layer of coffee-dipped biscuits and mascarpone cream.
- Dust the top layer with a generous amount of cocoa powder.
- Refrigerate for at least 2 hours before serving to allow the flavors to meld together.
