Three Bean Salad
This classic Three Bean Salad is wonderfully nutritious and combines three kinds of beans with a tangy vinaigrette dressing.
Ingredients - Serves 6
- Parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Sugar - 1 tablespoon
- White wine vinegar - 3 tablespoons
- Olive oil - 1/4 cup
- Red onion - 1/2, thinly sliced
- Chickpeas - 1 cup, drained and rinsed
- Kidney beans - 1 cup, drained and rinsed
- Green beans - 1 cup, cooked and cooled
Let's Get Started
- In a large bowl, combine the green beans, kidney beans, chickpeas, and red onion.
- In a small bowl, whisk together the olive oil, vinegar, sugar, salt, and pepper.
- Pour the dressing over the bean mixture and toss to coat.
- Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld together.
- Just before serving, sprinkle with chopped parsley.
