These Argentinian-style beef ribs are marinated in a flavorful chimichurri sauce and grilled to perfection.
Ingredients - Serves 4
- Salt and pepper - To taste
- Red pepper flakes - 1 teaspoon
- Olive oil - 1 cup
- Red wine vinegar - 1/2 cup
- Oregano - 1 tablespoon, dried
- Parsley - 1 cup, chopped
- Garlic - 4 cloves, minced
- Beef ribs - 2 racks
Let's Get Started
- In a bowl, combine the garlic, parsley, oregano, red wine vinegar, olive oil, red pepper flakes, salt, and pepper to make the chimichurri sauce.
- Place the beef ribs in a large dish and pour the chimichurri sauce over them. Turn the ribs to coat them in the sauce, then cover the dish and refrigerate for at least 2 hours, or overnight.
- Preheat a grill to medium heat.
- Remove the ribs from the marinade, reserving the marinade for basting.
- Grill the ribs, basting them with the marinade and turning them occasionally, for about 1.5 hours, or until they are cooked to your desired level of doneness.
- Let the ribs rest for a few minutes before serving.
