Let's Get Started

  1. In a large pot, heat some oil over medium heat.
  2. Add the minced garlic and sliced shallots, and sauté until fragrant.
  3. Add the pork belly pieces and cook until browned on all sides.
  4. Add the fish sauce, sugar, and black pepper to the pot, and stir well to coat the pork belly.
  5. Pour in the coconut water and water, and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the pork belly is tender and the sauce has thickened.
  7. Add the hard-boiled eggs to the pot, and simmer for an additional 10 minutes to allow the eggs to absorb the flavors.
  8. Serve the Thit Kho Tau hot, garnished with chopped green onions.
