Thai Peanut Curry Noodles
These Thai-inspired peanut curry noodles are packed with flavor and make a delicious and satisfying meal.
Ingredients - Serves 4
- Roasted peanuts - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Vegetables (such as bell peppers, carrots, and broccoli) - 2 cups, sliced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Brown sugar - 1 tablespoon
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Red curry paste - 2 tablespoons
- Coconut milk - 1 can (13.5 ounces)
- Peanut butter - 1/2 cup
- Rice noodles - 8 ounces
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat some oil over medium heat.
- Add the minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
- Add the sliced vegetables to the skillet and stir-fry for 3-4 minutes until they start to soften.
