Ingredients - Serves 4
- Roasted peanuts - A handful, crushed
- Fresh herbs (mint, cilantro, basil) - A handful, roughly chopped
- Red chili - 1, finely chopped
- Garlic - 2 cloves, minced
- Sugar - 1 tablespoon
- Lime juice - 2 tablespoons
- Fish sauce - 3 tablespoons
- Pork belly - 200 grams, thinly sliced
- Shrimp - 200 grams, peeled and deveined
- Lotus stems - 200 grams, thinly sliced
Let's Get Started
- Blanch the lotus stems, shrimp, and pork in boiling water. Drain and let cool.
- In a bowl, mix together the fish sauce, lime juice, sugar, garlic, and chili to make the dressing.
- In a large bowl, combine the lotus stems, shrimp, pork, fresh herbs, and dressing. Toss well to combine.
- Top with the crushed peanuts before serving.
