Thai Massaman Curry
This Thai Massaman Curry is a rich and flavorful dish made with tender beef, potatoes, and aromatic spices.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Roasted peanuts - 1/4 cup, crushed
- Lime leaves - 4
- Bay leaves - 2
- Cardamom pods - 3
- Cinnamon stick - 1
- Tamarind paste - 1 tablespoon
- Palm sugar - 2 tablespoons
- Fish sauce - 2 tablespoons
- Coconut milk - 1 can (400 ml)
- Massaman curry paste - 3 tablespoons
- Potatoes - 2 large, peeled and cubed
- Beef - 500 grams, thinly sliced
Let's Get Started
- Heat a large pot over medium heat and add the massaman curry paste. Cook for 1-2 minutes until fragrant.
- Add the beef slices and cook until browned on all sides.
- Add the potatoes, coconut milk, fish sauce, palm sugar, tamarind paste, cinnamon stick, cardamom pods, bay leaves, and lime leaves. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the beef is tender and the potatoes are cooked through.
- Remove the cinnamon stick, cardamom pods, bay leaves, and lime leaves from the curry.
- Serve the Massaman curry over steamed rice, garnished with crushed roasted peanuts and fresh cilantro.
