- Carrots - 2, cut into 1-inch pieces
- Coconut milk - 1 can (13.5 ounces)
- Curry powder - 2 tablespoons
- Shallots - 2, minced
- Garlic - 4 cloves, minced
- Lemongrass - 2 stalks, minced
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Chicken thighs - 1.5 pounds
Let's Get Started
- Season the chicken thighs with salt and pepper.
- In a large pot, heat some oil over medium heat. Add the lemongrass, garlic, shallots, and curry powder. Cook until fragrant.
- Add the chicken to the pot and cook until browned on all sides.

- Reduce the heat to low, cover the pot, and simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
