Thai Curry Fried Rice
This Thai-inspired fried rice is packed with aromatic flavors and colorful vegetables.
Ingredients - Serves 4
- Roasted peanuts - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Eggs - 2, beaten
- Lime juice - 1 tablespoon
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Thai red curry paste - 2 tablespoons
- Frozen peas - 1/2 cup
- Bell pepper - 1, diced
- Carrot - 1, diced
- Onion - 1, diced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Cooked rice - 4 cups, chilled
Let's Get Started
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add minced garlic and diced onion. Cook until the onion is translucent.
- Add diced carrot, bell pepper, and frozen peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
- Add chilled cooked rice to the skillet and break it up with a spatula. Stir-fry for 2-3 minutes to heat the rice.
- Add Thai red curry paste, soy sauce, fish sauce, and lime juice. Stir well to coat the rice and vegetables with the sauce.
- Continue stir-frying for another 2-3 minutes until everything is well combined and heated through.
- Remove from heat and garnish with fresh cilantro and chopped roasted peanuts.
- Serve hot and enjoy!
