Teriyaki Tempeh Stir Fry
A delicious and healthy vegan stir-fry dish made with tempeh, fresh vegetables, and a homemade teriyaki sauce.
Ingredients - Serves 4
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Brown sugar - 2 tablespoons
- Soy sauce - 1/4 cup
- Garlic - 2 cloves, minced
- Red bell pepper - 1, thinly sliced
- Carrots - 2, thinly sliced
- Broccoli - 1 head, cut into florets
- Vegetable oil - 2 tablespoons
- Tempeh - 1 block, cubed
Let's Get Started
- Heat the oil in a large pan over medium heat.
- Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the pan and set aside.
- In the same pan, add the broccoli, carrots, bell pepper, and garlic. Cook until the vegetables are tender, about 5 minutes.
- In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, and water.
- Pour the sauce over the vegetables in the pan and stir to combine.
- Add the cooked tempeh back into the pan and stir to coat in the sauce.
- Cook for another 2-3 minutes, until the sauce has thickened.
- Serve the stir-fry over rice or noodles.
