Beef Short Ribs with Gravy

Ingredients - Serves 4

Let's Get Started

  1. Season the beef short ribs with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Add the short ribs and brown on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the red wine to the pot and scrape the bottom to loosen any browned bits. Bring to a boil and cook until the wine is reduced by half.
  5. Return the short ribs to the pot. Add the beef broth, Worcestershire sauce, thyme, and bay leaf. Bring to a boil, then reduce the heat to low, cover, and simmer for 2-3 hours, or until the ribs are tender.
  6. Remove the ribs from the pot and set aside. Discard the bay leaf.
  7. In a small bowl, mix the cornstarch and water until smooth. Stir into the pot and bring to a boil. Cook until the gravy is thickened.
  8. Return the ribs to the pot and stir to coat with the gravy. Serve hot.
