Let's Get Started

  1. Rinse the dried anchovies under cold water to remove any impurities.
  2. In a bowl, combine minced garlic, fish sauce, sugar, black pepper, and chili flakes (if using). Mix well.
  3. Heat vegetable oil in a pan over medium heat.
  4. Add the dried anchovies to the pan and stir-fry for 2-3 minutes until they turn golden brown and crispy.
  5. Reduce the heat to low and add the garlic mixture to the pan. Stir-fry for another 2-3 minutes until the anchovies are well coated with the sauce.
  6. Remove from heat and let it cool before serving.
  7. Serve tep kho ta as a crunchy and flavorful appetizer.
