Tempeh Veggie Burger
A hearty and delicious plant-based burger made with tempeh and a variety of vegetables. Perfect for a healthy and satisfying meal.
Ingredients - Serves 4
- Lettuce, tomato, and other desired burger toppings - As needed
- Whole grain buns - 4
- Salt and pepper - To taste
- Egg or flax egg - 1
- Whole wheat breadcrumbs - 1/2 cup
- Soy sauce - 2 tablespoons
- Red bell pepper - 1, finely chopped
- Carrot - 1 large, grated
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Tempeh - 8 ounces
Let's Get Started
- Crumble the tempeh into a large bowl.
- Heat the olive oil in a skillet over medium heat. Add the onion, garlic, carrot, and bell pepper. Cook until the vegetables are soft, about 5 minutes.
- Add the vegetable mixture to the bowl with the tempeh. Stir in the soy sauce, breadcrumbs, egg, salt, and pepper.
- Form the mixture into 4 patties.
- Heat a little more olive oil in the skillet over medium heat. Add the patties and cook until browned on both sides, about 5 minutes per side.
- Serve the burgers on the buns with lettuce, tomato, and any other desired toppings.
