Gourmet Veggie Burger
A delicious and hearty veggie burger packed with various vegetables, beans, and spices.
Ingredients - Serves 4
- Lettuce, tomato, and avocado - For serving
- Whole grain buns - 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Egg - 1
- Breadcrumbs - 1/2 cup
- Cilantro - 1/4 cup, chopped
- Red onion - 1/2, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1, grated
- Black beans - 1 can, drained and rinsed
Let's Get Started
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add the grated carrot, minced garlic, chopped onion, cilantro, breadcrumbs, egg, cumin, salt, and pepper. Mix until well combined.
- Form the mixture into 4 patties.
- Heat the olive oil in a large skillet over medium heat.
- Add the patties and cook for 5-7 minutes on each side, until browned and heated through.
- Serve the burgers on the whole grain buns with lettuce, tomato, and avocado.
