Tempeh Tacos with Avocado Lime Crema
These vegan tacos are packed with flavor from the marinated tempeh and the creamy avocado-lime crema.
Ingredients - Serves 4
- Tomato - 1, diced
- Lettuce - 2 cups, shredded
- Tortillas - 8 small
- Cilantro - 1/4 cup, chopped
- Avocado - 1, ripe
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Tempeh - 8 ounces, sliced
Let's Get Started
- In a bowl, combine the soy sauce, lime juice, garlic, and cumin. Add the tempeh and let marinate for 15 minutes.
- While the tempeh is marinating, make the avocado-lime crema. In a blender, combine the avocado, cilantro, and remaining lime juice. Blend until smooth.
- Heat a pan over medium heat. Add the marinated tempeh and cook until browned, about 5 minutes on each side.
- Warm the tortillas in a dry pan over medium heat.
- To assemble the tacos, spread a spoonful of the avocado-lime crema on each tortilla. Top with the cooked tempeh, lettuce, and tomato.
- Serve immediately.
