Excelsior Empanadas

Ingredients - Serves 6
- Egg - 1, beaten
- Empanada dough - 12 discs
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Tomato - 1, finely chopped
- Green bell pepper - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Ground beef - 1 pound
Let's Get Started
- In a large skillet, cook the ground beef over medium heat until browned. Drain the fat.
- Add the onion, garlic, bell pepper, and tomato to the skillet. Cook until the vegetables are soft.
- Season with cumin, salt, and pepper. Remove from heat and let the filling cool.
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Place a spoonful of the filling in the center of each empanada disc. Fold the dough over to form a half-moon shape, then crimp the edges with a fork to seal.
- Brush the empanadas with the beaten egg. This will give them a nice golden color when baked.
- Bake for 25-30 minutes, or until the empanadas are golden brown.
