Tempeh Scampi Over Pasta
A vegan twist on the classic shrimp scampi, this dish features tempeh in a flavorful garlic and lemon sauce served over pasta.
Ingredients - Serves 4
- Pasta - 8 ounces, cooked
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Vegan butter - 2 tablespoons
- Lemon juice - 2 tablespoons
- White wine - 1/2 cup
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Tempeh - 8 ounces, cut into cubes
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute.
- Add the white wine and lemon juice and bring to a simmer. Cook for 2-3 minutes, until the wine has reduced by half.
- Add the vegan butter, parsley, salt, and pepper and stir until the butter has melted.
- Return the tempeh to the skillet and stir to coat in the sauce.
- Serve the tempeh scampi over the cooked pasta.
