Tempeh Scampi Over Pasta

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the garlic and cook until fragrant, about 1 minute.
  4. Add the white wine and lemon juice and bring to a simmer. Cook for 2-3 minutes, until the wine has reduced by half.
  5. Add the vegan butter, parsley, salt, and pepper and stir until the butter has melted.
  6. Return the tempeh to the skillet and stir to coat in the sauce.
  7. Serve the tempeh scampi over the cooked pasta.
