One Pot Tomato Lentil Pasta

Ingredients - Serves 4
- Parmesan cheese - For serving
- Fresh basil - A handful, chopped
- Salt and pepper - To taste
- Pasta - 2 cups
- Vegetable broth - 4 cups
- Canned diced tomatoes - 1 can (14.5 oz)
- Dried lentils - 1 cup
- Onion - 1, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the garlic and onion and cook until the onion is soft, about 5 minutes.
- Add the lentils, tomatoes, broth, pasta, salt, and pepper. Bring to a boil.
