Tempeh Gyros with Tzatziki

Ingredients - Serves 4

Let's Get Started

  1. In a bowl, combine the soy sauce, olive oil, minced garlic, and oregano. Add the tempeh strips and marinate for at least 15 minutes.
  2. While the tempeh is marinating, prepare the tzatziki sauce. In a bowl, combine the Greek yogurt, diced cucumber, lemon juice, and dill. Stir until well combined and set aside.
  3. Heat a pan over medium heat. Add the marinated tempeh and cook until browned on all sides, about 5 minutes.
  4. Warm the pita bread in the oven or on the stovetop.
  5. To assemble the gyros, spread a generous amount of tzatziki sauce on each pita. Top with the cooked tempeh, sliced tomatoes, sliced red onions, and shredded lettuce.
  6. Fold the pita over the fillings and serve immediately.
