Tempeh Gyros with Tzatziki
A delicious vegan take on the classic Greek dish. Marinated tempeh strips served in a warm pita with fresh veggies and homemade tzatziki sauce.
Ingredients - Serves 4
- Lettuce - 1 cup, shredded
- Red onion - 1, thinly sliced
- Tomato - 1, sliced
- Dill - 1 teaspoon
- Lemon juice - 1 tablespoon
- Greek yogurt - 1 cup
- Cucumber - 1, diced
- Pita bread - 4 pieces
- Oregano - 1 teaspoon
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Tempeh - 8 oz, sliced into strips
Let's Get Started
- In a bowl, combine the soy sauce, olive oil, minced garlic, and oregano. Add the tempeh strips and marinate for at least 15 minutes.
- While the tempeh is marinating, prepare the tzatziki sauce. In a bowl, combine the Greek yogurt, diced cucumber, lemon juice, and dill. Stir until well combined and set aside.
- Heat a pan over medium heat. Add the marinated tempeh and cook until browned on all sides, about 5 minutes.
- Warm the pita bread in the oven or on the stovetop.
- To assemble the gyros, spread a generous amount of tzatziki sauce on each pita. Top with the cooked tempeh, sliced tomatoes, sliced red onions, and shredded lettuce.
- Fold the pita over the fillings and serve immediately.
