Tempeh Gyros
A vegan take on the classic Greek dish, these tempeh gyros are packed with flavor and protein.
Ingredients - Serves 4
- Lettuce - 4 leaves
- Red onion - 1/2, thinly sliced
- Cucumber - 1, sliced
- Tomato - 1, sliced
- Tzatziki sauce - 1/2 cup
- Pita bread - 4 pieces
- Oregano - 1 teaspoon
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Soy sauce - 2 tablespoons
- Olive oil - 2 tablespoons
- Tempeh - 8 ounces, sliced
Let's Get Started
- In a bowl, combine the olive oil, soy sauce, lemon juice, garlic, and oregano. Add the tempeh slices and marinate for at least 15 minutes.
- Heat a skillet over medium heat. Add the marinated tempeh and cook until browned on both sides, about 5 minutes per side.
- Warm the pita bread in the oven or on the stovetop.
- Spread each pita with tzatziki sauce. Top with the cooked tempeh, tomato, cucumber, red onion, and lettuce.
- Fold the pita over the fillings and serve.
