Ingredients - Serves 4
- Soy sauce - For dipping
- Vegetable oil - For frying
- Cold water - 1 cup
- Tempura batter mix - 1 cup
- Assorted vegetables - 2 cups (such as bell peppers, broccoli, and sweet potatoes)
- Shrimp - 12 large, peeled and deveined

- Prepare the shrimp and vegetables by cleaning and cutting them into bite-sized pieces.
- In a large bowl, mix the tempura batter with cold water until it forms a thin batter.
