Tasso Ham
Tasso ham is a spicy and flavorful Cajun-style cured ham that is perfect for adding a kick to your dishes.
Ingredients - Serves 8
- Brown sugar - 2 tablespoons
- Dried oregano - 1 tablespoon
- Dried thyme - 1 tablespoon
- White pepper - 1 tablespoon
- Black pepper - 1 tablespoon
- Onion powder - 2 tablespoons
- Garlic powder - 2 tablespoons
- Cayenne pepper - 2 tablespoons
- Paprika - 2 tablespoons
- Salt - 1/4 cup
- Pork shoulder - 4 pounds, cut into 2-inch cubes
Let's Get Started
- In a large bowl, combine the salt, paprika, cayenne pepper, garlic powder, onion powder, black pepper, white pepper, dried thyme, dried oregano, and brown sugar to make the spice rub.
- Coat the pork shoulder cubes with the spice rub, making sure to evenly distribute the spices.
- Place the seasoned pork cubes in a large resealable plastic bag and refrigerate for at least 24 hours, or up to 48 hours, to allow the flavors to develop.
- Preheat your smoker to 225°F (107°C).
- Remove the pork cubes from the plastic bag and pat them dry with paper towels.
- Place the pork cubes on the smoker rack and smoke for 3 hours, or until the internal temperature reaches 165°F (74°C).
- Remove the smoked pork cubes from the smoker and let them cool.
- Once cooled, slice the smoked pork cubes into thin strips or dice them into small pieces.
- Your homemade tasso ham is now ready to be used in your favorite Cajun recipes!
