Let's Get Started

  1. In a large bowl, combine the salt, paprika, cayenne pepper, garlic powder, onion powder, black pepper, white pepper, dried thyme, dried oregano, and brown sugar to make the spice rub.
  2. Coat the pork shoulder cubes with the spice rub, making sure to evenly distribute the spices.
  3. Place the seasoned pork cubes in a large resealable plastic bag and refrigerate for at least 24 hours, or up to 48 hours, to allow the flavors to develop.
  4. Preheat your smoker to 225°F (107°C).
  5. Remove the pork cubes from the plastic bag and pat them dry with paper towels.
  6. Place the pork cubes on the smoker rack and smoke for 3 hours, or until the internal temperature reaches 165°F (74°C).
  7. Remove the smoked pork cubes from the smoker and let them cool.
  8. Once cooled, slice the smoked pork cubes into thin strips or dice them into small pieces.
  9. Your homemade tasso ham is now ready to be used in your favorite Cajun recipes!
