Spicy Chipotle Beef Ribs

- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Apple cider vinegar - 1/4 cup
- Brown sugar - 1/4 cup
- Garlic - 4 cloves, minced
- Chipotle peppers in adobo sauce - 2 peppers, plus 2 tablespoons of sauce
- Beef ribs - 2 racks
