  1. In a small bowl, combine the ancho chili powder, brown sugar, minced garlic, salt, and black pepper.
  2. Rub the spice mixture all over the beef ribs, then place them in a large dish. Cover and refrigerate for at least 2 hours, or overnight.
  3. Preheat your oven to 300°F (150°C).
  4. Heat the olive oil in a large oven-safe pot over medium heat. Add the ribs and sear on all sides until browned.
