Ancho Chili Beef Ribs
These beef ribs are marinated in a spicy ancho chili sauce, then slow-cooked until tender and flavorful.
Ingredients - Serves 4
- Beef broth - 2 cups
- Olive oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Garlic - 4 cloves, minced
- Brown sugar - 1 tablespoon
- Ancho chili powder - 2 tablespoons
- Beef ribs - 2 pounds

- In a small bowl, combine the ancho chili powder, brown sugar, minced garlic, salt, and black pepper.
- Rub the spice mixture all over the beef ribs, then place them in a large dish. Cover and refrigerate for at least 2 hours, or overnight.
- Preheat your oven to 300°F (150°C).
- Heat the olive oil in a large oven-safe pot over medium heat. Add the ribs and sear on all sides until browned.
- Pour the beef broth into the pot. Cover and transfer to the preheated oven.
- Cook for about 3 hours, or until the ribs are tender and the meat is falling off the bone.
- Serve the ribs with the cooking juices drizzled on top.
