Tarkhun
Tarkhun is a popular Georgian soft drink made from tarragon leaves and sugar. It has a vibrant green color and a refreshing, slightly sweet flavor.
Ingredients - Serves 4
- Green food coloring - A few drops (optional)
- Lemon juice - 2 tablespoons
- Sugar - 1 cup
- Water - 4 cups
- Fresh tarragon leaves - 1 cup
Let's Get Started
- Rinse the tarragon leaves and pat them dry.
- In a pot, bring the water to a boil. Add the tarragon leaves and let them steep for about 20 minutes.
- Strain the mixture, discarding the tarragon leaves.
- Add the sugar to the tarragon-infused water and stir until it's fully dissolved.
- Stir in the lemon juice. If you want a more vibrant color, add a few drops of green food coloring.
- Let the mixture cool, then refrigerate it until it's chilled.
- Serve the tarkhun over ice.
