  1. Rinse the tarragon leaves and pat them dry.
  2. In a pot, bring the water to a boil. Add the tarragon leaves and let them steep for about 20 minutes.
  3. Strain the mixture, discarding the tarragon leaves.
  4. Add the sugar to the tarragon-infused water and stir until it's fully dissolved.
  5. Stir in the lemon juice. If you want a more vibrant color, add a few drops of green food coloring.
  6. Let the mixture cool, then refrigerate it until it's chilled.
  7. Serve the tarkhun over ice.
