Tarhun
Tarhun is a traditional Georgian tarragon-flavored soda, often homemade in Georgian families. It's a refreshing, lightly sweet drink with a vibrant green color.
Ingredients - Serves 6
- Green food coloring - A few drops (optional)
- Lemon juice - 1 tablespoon
- Sugar - 1 cup
- Water - 1 liter
- Fresh tarragon - 1 bunch
Let's Get Started
- Wash the tarragon and pat it dry. Remove the leaves from the stems.
- In a pot, bring the water to a boil. Add the sugar and stir until it's completely dissolved.
- Add the tarragon leaves to the pot and let them steep in the sugar water for about 5 minutes.
- Remove the pot from the heat and let the mixture cool completely.
- Once cooled, strain the mixture into a large pitcher, discarding the tarragon leaves.
- Stir in the lemon juice. If you want a brighter green color, add a few drops of green food coloring.
- Chill the Tarhun in the refrigerator before serving. Serve over ice if desired.
