  3. Add the potato cubes to the marinade and mix well, ensuring all the potatoes are coated. Let it marinate for at least 30 minutes.
  4. Preheat the oven to 400°F (200°C).
  5. Thread the marinated potato cubes onto skewers or place them on a baking sheet lined with parchment paper.
  6. Brush the potatoes with oil and bake for 25-30 minutes, or until they are crispy and golden brown.
  7. Garnish with fresh coriander leaves and serve hot.
